Low Carb Flour: A Full Guide to Baking Without Carbs

It's easy to bake without regular flour. There are tons of flour substitutes around for every type of diet and lifestyle: from diabetes to Celiac disease, there are tons of reasons to use alternative flours. The good news is that with so many widely available keto friendly baking options to choose from, the days of hand-grinding your own almonds are long past.

However, if you're new to making low carb cookies, you might be feeling a bit overwhelmed. Just what is lupin flour and how does it compare to almond flour? Is keto wheat flour easy to bake with? And can you sub coconut flour in for regular flour or is it too dry?

How to bake with low carb flours

The quickest way to get started with low carb flours is to use recipes that have been developed using them. Most low carb flours cannot be directly substituted for all purpose wheat flour without drastically changing the results.

What low carb flours are there?

Almond Flour 

Almond flour has been a number one keto flour for a long time. This is for good reason! It creates a soft crumb with a good structure in cakes and cookies, plus almonds are nutrient rich and naturally gluten-free. 

How to store almond flour: Almond flour can go rancid if exposed to warm temperatures, so it is best stored in an airtight container in the fridge or freezer. 

Advantages: Creating a good crumb texture in cakes and bakes. Naturally low carb and rich in nutrients. Makes an excellent 'breadcrumb' alternative. Neutral, nutty flavor. 

Disadvantages: Not suitable for anyone with a nut allergy. Does not bind well by itself, so any recipe needs an additional binder.

Coconut Flour

Coconut flour is a dry low carb flour that's extremely high in fiber. This makes it an ideal choice for bakers looking to increase their consumption of fiber! It needs much more liquid than traditional all-purpose flour. 

How to store coconut flour: Keep it away from moisture, ideally stored in an airtight container in a dark pantry.

Advantages: Coconut is a binder, so can be combined with almond flour to create an excellent structure for low carb bakes. Creates a finer texture than almond flour. 

Disadvantages: Adds a coconut flavor, which depending on the context may not be wanted.

Lupin Flour

Lupin flour is made from the lupine bean, and is incredibly low carb--even lower in carbs than almond flour--as well as high protein. Over time the keto community has grown to embrace legumes after initially not liking them, however, peanut butter and other legumes are widely considered keto friendly nowadays.

How to store lupin flour: Keep it in an airtight container in a cool, dark place.

Advantages: It's plant-based, gluten free and a nutritional powerhouse. 

Disadvantages: If you're allergic to peanuts or soy you may also find that lupine beans cause an allergic reaction. It can have a strong flavor, so you'll need to up the amount of seasoning/sweetener to compensate.

Sunflower Seed Flour

Sunflower flour is a great nut-free alternative to almond flour. It's fine-textured, gluten free, high in fiber and friendly to keto and vegan baking. Another 100% plant-based whole food flour, you can make it yourself by grinding sunflower seeds or buy it from the store. 

How to store sunflower seed flour: Keep it in an airtight container in a cool, dark place.

Advantages: It's plant-based, nut-free, gluten free. Since it is free of allergens, it's great for children. It can be subbed 1:1 with almond flour, and is a cheaper alternative. 

Disadvantages: It is a bit higher in carbohydrates than almond flour, so whilst it can be used as 1:1 replacement for almond flour, be aware it will raise the net carbs of the finished product.

How these low carb flours stack up
