These golden brown cookies are full of butter and sweetened with monk fruit, so they're a great example of a low carb dessert. If you're new to keto baking, here's a great tip: To make the cookies soft and puffed up at the middle, use a little lemon juice. Will you taste any of the lemon? No, it's a small amount so it's really just there to help make the perfect keto cookie texture. It can be your secret ingredient!

Ingredients

  • 6 tbsp unsalted butter, softened
  • ⅓ cup sugar free substitute
  • 1 egg
  • ⅛ tsp fresh lemon juice
  • 1 tsp vanilla extract
  • 2 ½ cups almond flour
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 cup sugar free white chocolate chips
  • ½ cup chopped macadamia nuts

Directions

  1. Preheat oven to 350°F. Line a cookie sheet with parchment paper or a silicone baking mat.
  2. Cream the butter and sweetener in a mixing bowl using a stand or hand mixer on medium speed for about 2 minutes.
  3. Add egg, vanilla, and lemon juice. Blend on low for 30 seconds and then on medium until light and fluffy, scraping down the bowl.
  4. Add in half of the almond flour and beat.
  5. Add in the remaining almond flour, cinnamon, salt, and baking soda. Beat until combined.
  6. Fold in the sugar free white chocolate chips and macadamia nuts.
  7. Roll the dough into balls or use a cookie scoop and place on the cookie sheet. Flatten the top of the dough balls with a spoon.
  8. Bake for 8-12 minutes or until golden brown. Cookies should look soft but golden at the edges when ready. They will harden up as they cool.
  9. Remove the cookies and cool on the cookie sheet for 5 minutes before moving them to a cooling rack. If you move the cookies too soon, they will crumble.
