This new spin on an ice cream sandwich is gluten free and keto friendly! We take delicious edible cookie dough and add a layer of keto ice cream in the middle for a treat that will keep you cool this summer. Each bite has two layers of our keto chocolate chips and buttery cookie dough with vanilla ice cream keeping it cool in the middle.
How do we make this gluten free? Using lupin and almond flour in the cookie dough base does the trick. They're also great low carb flours to use if you want edible cookie dough, since they don't require baking to be enjoyed.
