Scrumptious and Addicting

I was on the hunt for a low carb substitute for vanilla wafers for my banana pudding. These were fabulous in the lower carb version I made. I will be purchasing them again. I ate an entire row before I was done layering the banana pudding they were that delicious. I love vanilla wafers and these hit the mark. I am keeping my fingers crossed that in the future you may be able to come up with vanilla wafers. Until this time, these do work!!

Amazing, buttery cookies!

These were so good, I honestly could hardly tell the difference from sugar sweetened shortbread! They break a bit easier, but that is not a problem since they are so delicious!!
