Lemon cheesecake is the perfect balance between zesty and creamy, so we made this lemon curd cheesecake with our sugar free lemon curd. We know making keto friendly lemon curd from scratch can be difficult, so that’s why we’ve created this spread that can be baked right out of the jar. All you have to do is bake the cheesecake and spread the lemon curd on top, creating a layered masterpiece of a dessert that happens to be gluten free.
First, we start by crushing our gluten free butter cookies (try our speculoos in this recipe for a kick of cinnamon) and mixing them with melted butter. You press the mixture into the pan to create a crust that’s easy and can be used in future recipes such as lemon bars or other cheesecakes.
