If you love s’mores, these gluten free s’mores cookie bars are a fun twist on the classic campfire dessert. Made with sugar free marshmallows, chocolate, and a crunchy cookie crust, they’re the perfect summer treat. Melty and chock-full of sugar free chocolate, this decadent cookie bar is the taste of summer in a single dessert. So, what makes a s’more so special? Chocolate, marshmallow, and graham crackers, of course! This dessert makes sure you have all three, without all the added sugar. These sugar free s’mores bars have all the flavor of traditional s’mores without the added sugar. For the “graham cracker” we’re using our cinnamon spiced gluten free speculoos cookies. Simply arrange them in the bottom of your brownie pan. Easy right? From there, you pour chocolate chip cookie dough made with our sugar free chocolate chips and bake in the oven.

Once the bar is mostly baked, we add our keto marshmallows on top with chopped dark chocolate squares. Our marshmallows are special because they can be baked and roasted like full-sugar marshmallows. Most sugar free marshmallows can’t do that, so these are great for your baking projects or roasting around the campfire. Let that bake a little longer and what you get is an ooey-gooey marshmallow and chocolate topping, chewy chocolate chip cookie middle, and a crunchy cinnamon cookie base.

This impressive dessert is pretty easy to make as the only thing you need to mix together is the chocolate chip cookie dough layer. The crust and the topping are as simple as opening a pack of ChocZero goodies!

How to make gluten free s'mores bars

While most cookie bars are made with wheat flour, you can easily make a gluten free s’mores bar with celiac friendly flours such as lupin and almond. Lupin flour adds protein to the dessert, while almond gives it a nice toasty “cookie” flavor that works well in a dessert like this. We also use ChocZero gluten free cookies for the crust!

 

What makes a great s'mores bar?

When you think about s’mores bars, three things stand out: chocolate, marshmallows, and graham crackers. Since we love chocolate, we wanted to make sure that it played a big part in this dessert. That’s why we’ve included our sugar free chocolate squares as topping. When melted with the marshmallows, it creates a decadent s’mores flavor that is toasty and delicious. For the graham cracker? We use our speculoos cookies as the crust. They’re spiced with cinnamon, so they taste like cinnamon graham crackers.

How can I make sugar free marshmallows?

We don’t recommend making sugar free marshmallows at home, as it can be difficult and honestly very messy. That’s why we made sugar free marshmallows you can use in any of your bakes. Unlike other sugar free marshies, our marshmallows can actually roast and melt like the real thing. That means you can use them in this recipe or take them on your next camping trip for s’mores around the fire.

 

How to make a keto cookie crust

Making keto crusts for pies and bars has never been easier thanks to our gluten free cookies. For this recipe, we simply place our speculoos cookies in the bottom of the pan. When you pour the cookie dough on top, the cookies will help create a crunchy crust bottom that’s a great texture contrast to the chewy cookie center.

 

How do I store s’mores bars?

Store in an airtight container at room temperature for 2-3 days. It can last about 4 days in the refrigerator.
