How to Melt Sugar Free Chocolate in the Microwave: The trick to microwaving chocolate is to keep it low! Put your microwave at 50% power and put a bowl of chocolate chips in for 30 seconds at a time. Check on it between intervals, stirring until smooth. If you see some small clumps, try to stir them into the chocolate before microwaving again. This is our favorite method of melting chocolate because it's a little easier and takes out some of the guesswork.
How to Melt Sugar Free Chocolate on the Stovetop: Pour only a few inches of water into a pot. Heat water to a comfortable simmer. Use a double boiler or find a bowl that fits on of the pot so that the bottom won't touch the water. Put your bowl or second pot on the first. Turn off the heat and add about 2/3rd of your chocolate to the bowl. Stir gently to melt with a spatula, stirring in those little clumps. Add the remaining 1/3rd of the chocolate at a little at a time and stir gently to melt.
How to Stop your Sugar Free Chocolate from Seizing: The most important thing is to prevent any water from coming into contact with your chocolate. Make sure your bowl is completely dry before you add your chocolate chips! If using a double boiler, stop the water from getting up to a full boil and don't cover your pan with a lid--you want to avoid any steam coming into contact with your chocolate.
If your chocolate does seize, and you were planning to use it as a drizzle or sauce, you can fix it by adding 1 tablespoon of boiling water and stirring vigorously until the chocolate is smooth. This will dilute your chocolate, but it should smooth out the consistency.
