Ingredients

  • 2 tbsp almond flour
  • 2 tbsp coconut flour
  • 2 tbsp ChocZero Vanilla Syrup
  • 1 tbsp unsalted butter, melted
  • ½ tsp baking powder
  • pinch of salt
  • ¼ cup blueberries

Directions

  1. Mix together almond flour, coconut flour, ChocZero Vanilla Syrup, butter, baking powder and salt in a small bowl. Set aside.
  2. In a large ramekin or microwave safe bowl, add blueberries to the bottom.
  3. Scoop shortcake mixture on top of the blueberries.
  4. Microwave for 1 minute until desired cake consistency is achieved. Top with homemade sugar free vanilla whipped cream or ice cream.
