Ingredients

Red Velvet Chaffle:

  • 2 eggs
  • 2 oz cream cheese
  • ¼ cup coconut flour
  • 2 tbsp buttermilk
  • 1 ½ tbsp monkfruit
  • 1 tsp baking powder
  • ½ tsp cocoa powder
  • Red food coloring

 

White Chocolate Cream Cheese Frosting:

Red Velvet Chaffle:

  1. Combine all the ingredients for the red velvet chaffle in a small bowl. Using an electric mixer, stir to combine.
  2. Pour ¼ of the batter into a preheated waffle maker. Cook about 3-5 minutes or until set.
  3. Remove and repeat with remaining batter.



White Chocolate Cream Cheese Frosting:

  1. To make the frosting, beat cream cheese, butter and vanilla in a medium bowl until blended.
  2. Mix in white chocolate and powdered sugar substitute slowly and beat until smooth.



Assemble your cake:

  1. Once your red velvet chaffles have cooled, start to assemble your cake.
  2. Lay down one chaffle, spread cream cheese frosting on top and lay down a second chaffle.
  3. Continue to lay down the tiers of your cake until you have used up all of your chaffles.
  4. Add cream cheese frosting to the outside and serve!
