We can't get enough of Halloween decorations, so we came up with this Keto Graveyard Cake to let loose our creative spirits!

This fudgy cake is topped with a decadent chocolate frosting made from our sugar free dark chocolate chips. Truly a dream come true for all fellow chocolate lovers out there. Once the cake is cool and frosted, it's time to let the ghosts and pumpkins out to play. 👻 Make sure to decorate with our keto friendly Halloween candy!

Ingredients

Chocolate Cake:

  • 1 cup almond flour
  • ¼ cup 100% unsweetened cocoa powder
  • ¼ cup coconut flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, softened
  • ¼ cup monkfruit blend sweetener
  • 4 eggs
  • ½ cup heavy whipping cream

 

Frosting:

  • 1 cup butter, softened
  • 1 ½ cups powdered erythritol or monkfruit blend sweetener
  • ¼ cup 100% unsweetened cocoa powder
  • ¼ cup ChocZero Dark Chocolate Chips, melted
  • 3 tbsp heavy whipping cream
  • ¼ tsp salt
  • 2 tsp vanilla extract

Directions

  1. Preheat oven to 350 degrees and coat a baking dish with cooking spray.
  2. In a medium bowl, whisk together almond flour, cocoa powder, coconut flour, baking powder and salt. Set aside.
  3. In a large bowl, cream together the butter and sweetener until fluffy (2-3 minutes). Whisk in eggs and heavy cream.
  4. Slowly mix in dry ingredients into the wet ingredients and stir until combined.
  5. Pour chocolate cake batter into baking pan and bake at 350 degrees for 27 to 30 minutes. Let cool completely.
  6. To make the buttercream frosting, whip the butter until light and fluffy (about 2-3 minutes) in a medium bowl. Add in remaining ingredients including melted Dark Chocolate Chips and continue to whip until creamy and smooth.
  7. Spread chocolate frosting on the cake. Sprinkle down chocolate shavings to look like dirt. Decorate with ChocZero Pumpkins and Ghosts and sugar free gummies.
