In a small saucepan over low-medium heat, add in heavy cream and cream cheese. Stir until cream cheese has completely melted. Once the cream cheese has melted, add in brewed coffee (optional), vanilla extract, and salt.
Remove saucepan from the stove and slowly pour heavy cream mixture into mixing bowl with the sugar free milk chocolate chips. Allow the heavy cream mixture to melt the chocolate. Slowly stir until all the chocolate has melted.
Place mixing bowl in the refrigerator for 1 hour to allow chocolate to cool and thicken.
Once the chocolate has cooled, scoop out about a tablespoon size dough ball and place it on a parchment paper-lined baking sheet. You can use a tablespoon sized scooper or you can roll the dough with your hands. Do this as quickly as possible as you want to make sure the chocolate doesn't start to melt. After all truffles have been formed, place them in the freezer for 30 minutes.
Once truffles have hardened you can roll them in your favorite keto toppings. Store in an airtight container in the refrigerator for up to one week.
