Keto Friendly Chipless Cookies

Looking for the perfect chewy gluten free cookie? We took a traditional chocolate chip cookie recipe and removed the chips for a chewy, brown sugar cookie (without the sugar!) that you’re going to love. Of course, we couldn’t make them without chocolate, so we dipped these chipless cookies into sugar free dark chocolate and sprinkled them with sea salt flakes. You’ll love how every bite has a piece of chocolate and the rich, caramelized taste of these chipless cookies.
So, how do we create a chewy gluten free cookie? We use lupin flour! It’s a relatively new flour on the keto scene that allows you to create baked goods with a soft and chewy texture. Lupin flour is made from lupini beans and doesn't have a strange taste. Plus, there’s a ton of protein in it, so it helps make these cookies not only delicious but satisfying as well. We also added our sugar free French vanilla syrup to bring a sweetness to the dough that’s uniquely satisfying. French vanilla has a warm custard flavor, so it’s perfect for a brown sugar cookie like we’re creating here.
You might be wondering: Is this just a sugar cookie recipe? No! A chipless cookie is different from a sugar cookie because of the brown sugar substitute that we use. Since we want to make sure this cookie doesn’t have any added sugar, we use brown sugar substitute to bring that delicious caramelized buttery flavor. All our ingredients are zero sugar added, including our sugar free chocolate chips.
Even though this is a chipless cookie, we couldn’t resist dipping them in dark chocolate. We use our vegan friendly sugar free chocolate chips for this one, but you can try milk or white chocolate if you prefer. We also suggest sprinkling sea salt if you choose the dark chocolate, as it naturally brings out the flavor of the chocolate and cookie.

How can I add chocolate to a chipless chocolate chip cookie?
If you’d like to eat the cookie without any chocolate, go for it! These are delicious cookies on their own. But, we love chocolate here at ChocZero, so we couldn’t resist dipping these in chocolate. You can melt down chocolate and dip the bottom of the cookie into it. Then, you can sprinkle the cookies with sea salt flakes if you like.
How can I customize a chipless cookie?
Since the chipless cookie is a blank slate, you can customize it really well! We recommend adding nuts and dipping it in chocolate. We use sugar free dark chocolate for these cookies, but you can try white or milk chocolate for a unique flavor.

How can I dip a cookie into chocolate perfectly?
The first step to dipping a cookie perfectly is to make sure the cookie is cooled completely. This means they’re dry to the touch and not warm. After you’ve melted the chocolate (we recommend doing so in the microwave with coconut oil for a smooth consistency), hold the cookie with a fork and dip the bottom of the cookie into the melted chocolate. This might be easiest with a flat bottom bowl. Gently lift the cookie out of the chocolate and tap away any excess chocolate.
How do you sweeten sugar free cookies?
You can sweeten sugar free cookies with granulated sugar substitutes. We also use a splash of our sugar free French vanilla syrup, as it adds a delicious custard flavor to these cookies.
