How do you make the filling for a peanut butter patty? These cookies are special because you create your own peanut butter confectionary layer. This means mixing powdered sugar substitute with peanut butter and some vanilla extract. The layer then becomes soft and yummy, but won't go running off your cookie. From there, you can dip the cookies in melted chocolate. If you prefer a more adult version of the cookie, you can always use our sugar free dark chips.
In a bowl mix the cookie base ingredients until a dough has formed. Using a small cookie scoop, scoop small balls of dough on to a parchment lined baking tray and shape and press them into flat discs. Bake at 350°F for 10 to 12 minutes.
In a separate bowl, mix the peanut butter ingredients until a soft dough has formed. The dough should feel light but retain shape.
Once the cookies have baked and allowed to cool, take 1/2 tablespoon portions of the peanut butter dough and create a flat disc on top of the cookies. Once all cookies have a peanut butter disc on them set the baking tray in the fridge.
In a small bowl melt the sugar free milk chocolate chips in 15 second intervals, stirring in between. If the melted chocolate is too thick add a tablespoon of avocado or coconut oil.
Remove the chilled cookies from the fridge and dip them into the melted chocolate using a fork and place back on the parchment. Once all of the cookies have been dipped set the tray back in the fridge for another 15 to 20 minutes or until set.
