These deliciously spooky Keto Halloween Jack O' Lantern Cookies are a great Halloween treat that adults and kids can indulge in all spooky season!

Start with a tasty keto shortbread cookie base that is sugar free and full of flavor. After you cut out your spooky jack o' lantern faces, chill for a few minutes before adding in your filling. 

Spread a huge dollop of our low carb chocolate hazelnut spread for the pumpkin face filling--the result is a spookily delicious cookie! And best of all, this cookie can be customized with a variety of keto spreads, like our coconut spread or our cookie spread. Next thing you know, you'll have a whole patch of jack o' lantern cookies the whole family can enjoy!

Ingredients

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • ½ cup granular sugar substitute
  • 1 tsp vanilla
  • ½ cup ChocZero Chocolate Hazelnut Spread

Directions

  1. In a medium bowl, sift together almond flour, coconut flour, and salt. Set aside.
  2. In a separate bowl, cream together butter, sugar free sweetener and vanilla extract.
  3. Using an electric mixer, slowly mix in dry ingredients into the butter mixture. Mix until smooth and combined.
  4. Place dough in between two sheets of parchment paper and roll out using a rolling pin until dough is ⅛ - ¼ inch thick. Place dough in the refrigerator for 30 minutes.
  5. Remove from the refrigerator and punch out pumpkin shapes using a pumpkin cookie cutter. Place each pumpkin onto a parchment lined baking tray. Using a knife cut out a jack o'lantern face in half of the cookies. Refrigerate again for 15-20 minutes
  6. Bake at 350°F for 6-7 minutes or until edges start to turn golden brown. Remove from the oven and let them cool completely.
  7. Spread 1 tablespoon ChocZero Chocolate Hazelnut Spread on the uncut cookies and then place the cut jack o'lantern cookies on top. Repeat with remaining cookies.
