Because of the filling, these cherry cakes have layers, whereas chocolate cake doesn’t need to. The second ingredient is whipped cream which is also contained in the filling. Black Forest cakes also tend to be lighter, whereas chocolate cake can come in all sorts of forms and consistencies. In terms of a substitute for kirsch in Black Forest cake, we recommend making a cherry jam-like filling instead of using kirsch. You can still make a Black Forest cake this way, and we used a sugar free cherry syrup by using our zero sugar jam–it’s a great way to still get that rich, robust cherry flavor in your cake while keeping it low sugar. The cake also uses maraschino cherries most often, however fresh cherries can be used as well. It just will not have as much of a pop of flavor or be as sugary sweet as maraschino cherries.
The origin of the Black Forest Cake is a little complicated. Black Forest Cake is indirectly named after the Black Forest (Schwarzwald) mountain range in southwestern Germany. The reason it is not fully named is because rather than the range itself, the cake is named after Schwarzwälder Kirsch. Schwarzwälder Kirsch is a specialty liquor from that region and is distilled from cherries.
The difference between a white forest cake and Black Forest Cake is that a white forest cake contains layers of vanilla cake, while a Black Forest Cake contains layers of chocolate cake. Besides that, both recipes are pretty much the same, including fillings and toppings.
Typically, cherries are not keto friendly. However, you can choose to consume a half-cup of cherries. This way, it is still possible to have cherries, whether it be in a sauce, jam, drink, or on its own, and stay in ketosis. However, as a result of this, carbs must be severely limited in order to compensate for the carbs from the cherries. We would recommend that if you do choose to enjoy cherries while staying keto friendly, that you do not exceed about one quarter of a cup of the fruit.
You can get a standard Black Forest cake near you at a grocery store or bakery. Unfortunately, however, if you go to a local bakery or grocery store, the cake will most likely not be gluten free, and be made with ingredients full of sugar and carbs. Additionally, store bought cakes tend to have been sitting out for a while, which can cause them to dry out or be made in a rushed manner and with lesser quality ingredients.

The difference between buttercream and frosting is that they are made with different ingredients. Frosting does not contain the main component of the word “buttercream,” and that’s butter! Instead of butter, shortening or cream cheese is what is typically used to make frosting. Of course, we feel like most people use frosting or icing interchangeably–so say whatever you want!
The different types of buttercream are American, French, Swiss, Italian and German. These different types of buttercream all contain butter and sugar, but have different textures and overall ingredients.
The best butter for buttercream is unsalted butter. This is because the salt content cannot be controlled, since salted butter from the store varies by brand. Also, make sure to either use softened butter or let it sit out at room temperature until soft so that the buttercream can be combined easily and without chunks. We always like to use grass-fed butter for our buttercream too for an even better texture and taste.
If you have trouble piping your buttercream, you may have whipped it too long and over whipped it. If you whip your buttercream for too long, it can create bubbles in the mixture. This is because over time, whipping creates pockets of air, and too many bubbles can make it harder to pipe. When piping, it can interrupt a smooth, consistent piping job as the string of frosting comes out due to a pocket of air separating it.
Keto buttercream should be cold before piping because it will set with a shape closer to what you pipe on. For example, if your icing is warm, it may melt onto your cake and not hold. Also, a good tip for piping buttercream is to chill your cake in the refrigerator for at least two hours to make sure your icing doesn’t melt. The best way to do so is to refrigerate overnight. Then, use a piping tip to get the cleanest lines and icing shapes. In a pinch, you can cut the end of a Ziploc bag and pipe using the end!

What we’re going to be making is French meringue, which is the easiest of the three types. This type of meringue is baked in the oven and then left there to form perfect fluffy clouds full of deliciousness. The French method makes it simple to create meringue cookies thanks to the time spent in the oven.
While marshmallows can taste like meringue, there’s a slight difference! Marshmallows take the Italian meringue method and use gelatin so that it can set into little jiggly cubes. If you’ve watched any baking competition show, you might have seen how the contestants stress over meringue. Why? They’re trying to get those revered “stiff peaks”. We’re here to tell you the best tricks to always get those peaks every time. No stress involved. First things first: you want your egg whites to be free of any yolk or egg shells. You can use carton egg whites for this process if you want it to be easier.
Next, we recommend you use a stand mixer since this will be a slow process and you don’t want your hand to get tired.
